Eggplant with vegetables

Description

Ingredients:

1. Red bell pepper;
2. Sweet green pepper;
3. Onion;
4. Garlic;
5. Eggplant;
6. Pomegranate;
7. Salt;
8. Herbs.

Cooking method:

Cut the eggplant into small, lengthwise pieces and fry them until well-cooked. Transfer the fried eggplant to an iron pot and add finely chopped red and green sweet pepper (also cut lengthwise). Include onion slices, thinly sliced coriander, parsley, and basil. Crush several cloves of garlic into the mixture and sprinkle with fenugreek and dried coriander. Finally, add mayonnaise and mix everything well.
